.Ultra Crispy Burger Recipe
6 oz of beef beef, cut out of gristle, and cut into 1 inch cubes
5 oz of beef brisket, cut out of gristle, and cut into 1 inch cubes
12 once sketch, fat and meat carefully removed from bone and cut off silverskin, bones discarded or reserved for another use (about 5 ounces of combined meat and fat)
Freshly ground black oven and black pepper
1/2 teaspoon of vegetable oil
4 Slices of American Cheese
4 soft white rolls of hamburgers, slightly toasted
Chips and sliced onions (optional)
Position the feed shaft, blade, and nut 1/4 inch of defrosters in the freezer until cool. Meanwhile, insert the pieces of meat into a baking sheet, leaving space between each piece and place in the freezer for 10 minutes until the meat is firm but not frozen.
Combine the meat into a large bowl and roll to combine. Mix the meat directly on the parchment or on the sheet baking sheet.
Without collecting the meat, divide it into four stacks on the baking sheet and lightly press the staves approximately 4 inches wide and 1/2 inches thick. The walls must remain loose and have irregular edges. They are generously seasoned with salt and pepper. Using a large spatula, carefully wrap the parcels (some may fall apart - just push them back together). Stain the second side with salt and pepper and refrigerate until it is ready for use (can be stored in a tray with plastic lid in the refrigerator for up to 1 day).
Heat the vegetable oil in an 8 inch hot frying pan until smoking. Carefully move the patty into the skillet and bake without moving until it forms a dark crust, about 2 1/2 minutes (open the window, disarm the fire alarm and prepare for spraying). Using the spatula, carefully turn the patty and the top with the cheese. Continue cooking from 1 to 2 minutes longer until you reach the desired doneness (the patty will be at least average but will remain juicy until it is well done)
Meanwhile, place the pickles and onions on the bottom of the hamburger bun if desired. Cover with cooked patty, buns, and eat immediately. Repeat with the remaining burgers, discarding all except 1 teaspoon of skillet grease between burgers.
